McKimbell’s Clover is a locally, family owned and operated, USDA inspected, HACCP certified, full-service lamb, mutton, cow and goat processing plant located in Griffin, Georgia. Our facility is built to serve the farmers and consumers with the highest level of care and professionalism.

Our small work crew has been hand-picked with the highest expectations of skill and cleanliness to ensure quality meat cuts. We pride ourselves on our high standards of humane handling and the quality of our meat processing. We know the hard work our farmers put into raising their animals and we continue that hard work by providing them the highest quality processing. What to
Expect

The number one question most asked is "How much meat will I get back (yield)?" There are several factors that can play an important role in making that determination. What breed? Is the animal male or female? Bone-in or boneless cut? Is this a younger animal or an older animal? Below is an average of what you might expect from your animal.

Beef
Live Weight = 1200 pounds
Hanging weight = 600 - 650 pounds
Finished weight = 360 - 420 pounds
Sheep & Goat
Live Weight = 700 pounds
Hanging weight = 245 - 350 pounds
Finished weight = 147 - 245 pounds

Farm to
Table

We believe it is important for people to know where their food comes from and what it takes to produce healthy, natural foods, taking great pride in the work we do here. McKimbell’s Clover has formed a local cooperative with farmers in the beef, lamb and goat industries. We have chosen farmers that we know raise their animals responsibly and humanely. All livestock is processed here on the farm in our USDA facility which serves both the farmers and consumers.

Every package of meat processed at McKimbell’s Clover will be labeled.

Bring Your
Livestock

If you’re interested in dropping off your animal for meat processing, let us know. We can take care of all your custom processing needs. We’re happy to provide processing services for livestock that you personally cultivated at our USDA Inspected Processing facility. We harvest Sheep, Lamb, Goats and Cows. No other processing facility provides the personalized services that we do.
