PRICING

AGING

Beef will hang for 14 days, for each additional day beyond this you will be assessed a hanging fee of $30/day. Sheep and goats will hang for a minimum of 48-hours. 

PACKAGING

All products will be vacuum packaged and packed in boxes that are easy to stack and travel– no coolers are needed. 

PICK UP

You will receive an email or call once your products have been processed. Following this notification you will have 5 business days to pick-up your products after which you will be assessed a storage fee per box. Please plan accordingly so that you may get your products home and enjoy them as soon as possible. Products left at our facility for more than 30 days will become property of McKimbell’s Clover and will be donated to a local charity or sold for the cost of processing.

BEEF

Please note, if your beef animal is over 30 months, cuts from the rib and loin are required to be boneless. If you are aware that your animal is close to, but not over 30 months of age and you would like bone-in loin cuts please provide a record of birth prior to slaughter.

Slaughter Spot Deposits

Due 60 days prior to slaughter, no refund for no shows. We reserve the right to hold and feed your livestock up to 7 days due to: weather, equipment breakdowns, workforce availability and etc.
No Show Fee: $200/head with a week or less notice and $100/head with a two-week notice.

Slaughter Fees

Fee is based on hot carcass weight and includes slaughter, processing, boxes, and waste disposal. Fee guarantees you at least 14 days for beef, 3 days for lambs and goats of aging time in the carcass cooler. Carcass may hang longer due to weather, equipment breakdowns, workforce availability, etc. 

BEEF 

Slaughter and Processing: per carcass weight 

  • 650 lbs. or less – $750
  • 651 lbs. to 850 lbs. – $1.17/lb. 
  • 851 lbs. to 1,000 lbs. – $1.22/lb.
  • 1,001 lbs. to 1,200 lbs. – $1.28/lb.
  • 1,201 lbs. and above – $1.36/lb. 
  • Slaughter only – $0.25/lb. – min. of $165
  • Emergency Slaughter $0.50\lb. – min. $300 

LAMB & GOAT

Slaughter and Processing: per carcass weight 

  • 60 lbs. or less – $215
  • 61 lbs. to 100 lbs. – $2.00/lb. 
  • 101 lbs. to 150 lbs. – $2.15/lb. 
  • 151 lbs. and above – $2.30/lb. 
  • Slaughter only $2.50/lb. – min. of $150
  • Emergency Slaughter $1.00/lb. – min. $200

Mud Score: 2 – $15, 3 – $30, 4 – $60, 5 – $90
Save Head: $30

Pregnant Animal: $35/animal
Horned Animal: Over 8″ is a min. of $75/animal or $150/hr. of additional time to stun. Additional time is calculated after first 15 minutes of time taken to stun the animal. 
Crazy or Stubborn Animal: Minimum charge of $75/animal or $150/hr. of additional time to stun. Additional time is calculated after first 15 minutes of time taken to stun the animal. 

Split Charges and Data Collection Fees:

1/2 Carcass Split: $25 per half
1/4 Carcass Split: $50 per quarter beef, lamb will not split into quarters. 
Extra Beef Carcass Aging (Beyond 14 days): $30/carcass per day
Carcass Data Collection (Quality Grade, Yield Grade, Pictures): $30
Individual Carcass Cut Data Pull: $30
