Rack of Goat

The rack of goat is a delicious roast alone or 2 – 3 racks can be tied together to form an elegant crown roast. A full rack contains 8 ribs. The chine (feather bones) is removed for preparation to French.  Goat racks are generally smaller than lamb racks and have less fat. Our half rack option is perfect for two.

Weight Range:

Large:   2.1 – 2.4 lb
Medium:   1.7 – 2.0 lb
Small: 1.1 – 1.6 lb
Half:   .8 – 1.2 lb
