Beef Shanks (Meat on Soup Bones)

At McKimbell’s Clover, we believe beef shanks are the perfect meat for making a homemade soup. Our beef shanks are only cut at the McKimbell’s Clover farm, which means they contain healthier fats. Our cuts are an environmentally friendly alternative to grain-fed beef. This meat is absolutely GMO-free and doesn’t contain use of steroids or hormones. The meat in this cut surrounds the bone and is sometimes considered too tough for mealtime – something we strongly disagree with! The shanks are cut from just above the hock of the animal, usually about 1-inch thick, and add a delicious, trademark flavor to any soup or broth. For the best results, we suggest you try braising and simmering them for around three to five hours, in water or stock. This will give you that perfect, fall off the bone texture. We guarantee the wait will be well worth it when you’re enjoying a meal rich in flavor and nutrition.
