Rack of Sheep

The rack of Sheep meat is a delicious roast alone or 2 – 3 racks can be tied together to form an elegant crown roast. A full rack contains 8 ribs. The chine (feather bones) is removed for preparation to French. This makes Frenching easier.  It also allows the Sheep meat rack to be cut into chops with a knife between the rib bones. Serves 4
