Rack of Sheep Frenched

The rack of Sheep is a delicious roast alone or 2 – 3 racks can be tied together to form an elegant crown roast. A full rack of Sheep contains 8 ribs. This rack of Sheep comes Frenched with the cap off. A classic cut, offering juicy morsels of meat clinging to the rib bone sometimes called “lolly pops”. The chine (feather bones) is removed to allow the rack to be cut into chops with a knife between the rib bones. Whether served formally or casually this rack of Sheep cut is truly a treat. Frenching may take additional time depending on processor’s schedule.
