Sheep Shanks Osso Bucco

Our Sheep shanks Osso Bucco style are cross cut 2 times. Osso Bucco is Italian for bone with a hole and refers to the marrow in the center of the cross cut shank. The reason for cutting is to expose the richness of the bone marrow that adds nutrients and flavor. They can be seasoned, slow cooked and serve on rice or pasta.
Shanks cut into approximate 1 to 2 inch individual pieces.
